    Sourdough simply uses wild yeast in place of commercial yeast to leaven the bread. It relies on the wild yeasts that are in the air all around us and cultures those yeasts in a warm, wet environment created with water, flour, and sometimes other components. When creating a sourdough starter, we always felt like we were on an expedition trying to trap invisible yeastie beasties with our flour and water concoctions. Because we couldn’t see the beasties, we were never sure what we had captured. While usually successful, we never felt like we were in control. Maybe that is the way sourdough bread should feel, a symbiosis with nature. But there is an easier way: use commercial yeast in the starter. I know, that’s heresy to the sourdough bread zealot but we only care about the bread. Using commercial yeast is easier, it’s the alcohol from the long cool fermentation that creates the sourdough like flavor, and the wild yeasts will eventually take over the starter anyway. Because it's easy, it’s no big deal if you abandon your starter after a few weeks; you can readily start another when you’re back in the mood or have the time. Using this recipe for sourdough bread, a small amount of yeast is used in the starter. As the starter is used and refreshed with new feedings of flour and water, wild yeasts are introduced and cultivated. Here is the recipe: For the starter: 1 cup warm water (about 110 degrees) 1/4 teaspoon yeast 1 cup high gluten unbleached flour. Mix the starter in a glass or steel bowl, cover with plastic wrap, and set it aside at room temperature until it is doubled and bubbly, maybe 4 to 6 hours. For the sponge: A sponge is a pre ferment, a wet mixture of flour and yeast that acts as an incubation chamber to grow yeast at the desired rate. It is added to the dough. 1 cup of the starter 3/4 cup warm water 2 cups flour Mix the one cup starter with the flour and water, cover, and set aside to ferment until it has tripled in volume. At room temperature, it will take four to eight hours. You can put it in a cool place about fifty degrees and let it perk all night. (In the winter, your garage may be just right.) You can also put it in the refrigerator overnight. At temperatures of forty degrees, the yeast will be inactive but the friendly bacteria will still be working and enhance the sour flavor of the bread. If you retard the growth with lower temperatures (“retard” is the correct term for slowing the growth of the yeast), simply bring the sponge to room temperature and let it expand to three times its original volume before proceeding. For the dough: All of the sponge 11/2 cups flour (more or less) 2 teaspoons salt Mix the salt with the flour. Knead the combination into the sponge by hand until you have a smooth, elastic, slightly sticky dough, adding more flour as needed. Put the dough in an oiled bowl and let it rise again until doubled, about an hour. Bakers note: Notice that the salt is not added until the last stage. Salt in the sponge would inhibit yeast growth. Form the loaves: Though you can make this bread in pans, it works best as a large freestanding round or oval loaf or two smaller loaves. Place a clean cotton cloth in a bowl or basket in which to hold the loaf. Lightly dust the interior of the bowl with flour. Place each formed loaf upside down in a bowl on top of the dusted flour. Cover the loaves with plastic and let them rise again until doubled. This rising will probably take less than an hour. Bakers note: You want a light dusting of flour on the cloth to be transferred to the bread, not a heavy caking. Softly sifting flour from a strainer is the easiest way to achieve an even coating. If you choose to bake the bread in pans, omit this step. Instead, let the dough rise in a greased bowl covered with plastic until doubled. Form the loaves for pans, place the loaves in greased pans, and let rise until well expanded and puffy. Bake at 350 degrees until done, about 30 minutes. To bake crusty bread: To form the thick, chewy crust that is typical of artisan breads, follow these instructions: Place a large, shallow, metal pan in the oven on the lowest shelf. You will pour hot water in this pan to create steam in the oven. (High heat is hard on pans so don't use one of your better pans and don’t use a glass or ceramic pan which might shatter.) An old sheet pan is ideal. Fill a spray bottle with water. You will use this to spray water into the oven to create even more steam. Preheat the oven to 425 degrees. When the oven is hot and the bread is fully risen and is soft and puffy being very careful not to burn yourself with the rising steam and with a mitted hand—turn your head away and pour two or three cups of very hot water in the pan in the oven. Quickly close the oven door to capture the steam. With spray bottle in hand, open the door and quickly spray the oven walls to create more steam and close the door. The oven is now ready for the loaves. Work quickly to get the bread in the oven before the steam subsides. Gently invert the loaf or loaves onto a slightly greased non insulated baking sheet on which a little cornmeal has been dusted. With your sharpest knife, quickly make two or three slashes 1/4 inch deep across the top of each loaf. This will vent the steam in the bread and allow the bread to expand properly. Immediately, put the bread in the steamy oven. After a few moments, open the door and spray the walls again to recharge the steam. Do this twice more during the first fifteen minutes of baking. This steamy environment will create the chewy crust prized in artisan breads. Let the bread bake at 425 degrees for fifteen minutes in the hot steamy oven and then reduce the temperature to 375 degrees and bake for a total of 35 to 40 minutes. Check on the bread ten minutes before the baking should be complete. If the top is browning too quickly, tent the loaf with aluminum foil for the remainder of the baking to keep it from burning. The bread is done when the crust turns a dark golden brown and the internal temperature reaches 210 degrees. It is important that the bread is well baked to drive moisture from the loaf. If the bread is under baked, the excess moisture will migrate to the crust and you will no longer have the dry chewy crust of a great artisan loaf. This sourdough bread is to die for. The prolonged rising gives the yeast plenty of time to convert the starch to sugars and the friendly bacteria a chance to impart their nut like flavors. Storing your crusty bread: Unused crusty bread should be stored in a paper bag at room temperature. If the bread is stored in a plastic bag, the crust will become soft. It is, of course, recommended that smokers quit but short of that, there is little prevention for smoker’s breath. For a temporary fix, brush your teeth, chew gum or use a mint. People with sinus conditions produce mucus that can be foul smelling. As a treatment for the sinus condition, a patient may be prescribed antihistamines which can cause dry mouth. If the mouth does not produce enough saliva to remain moist, this will cause bad breath. This is also why people have morning breath after sleeping for several hours allowing the mouth to dry out. Brushing and drinking plenty of water will help alleviate this. There are several natural remedies found to help counteract the effects of bad breath. Chewing cardamom seeds, sunflower seeds, mint leaves and parsley are known to deodorize. Gargling with a mixture of lemon juice and water also helps. Brushing with baking soda and adding it to water for gargling is a popular choice in home remedies. Drinking teas with spices such as cardamom, anise, cinnamon and fennel are all reported to help sweeten breath. The best way to treat bad breath is to ensure proper dental care. Brushing and flossing regularly will help deter bacteria from forming on teeth and tongue. As food particles can get trapped between teeth, flossing is essential to ensure plaque does not accumulate. Regular trips to the dentist for professional cleaning are also advised. When brushing, ensure a good toothbrush is used and do not neglect the tongue. Bacteria can get trapped on the tongue as well so thoroughly brush it. If bad breath is a persistent condition, seek consultation with a dentist. It may be a sign of a more serious dental issue or gum disease. If a dentist rules out dental problems as a cause, a referral to a medical doctor may be in order. Certain conditions such as liver and kidney diseases can contribute to bad breath.


    After Katrina Seven Things You Can Do


    : If you are like me, you are living some distance from the devastation wrought by Katrina. If you are like me you not physically impacted and can watch the plight of others on television in the comfort of your home. And if you are like me, you are wondering what you can do. I believe the answer to that question is an important one. It can help define who you are and what you have and choose to give to the world. The list that follows is not meant to stimulate your thinking. It is meant to stimulate action. All of us can do all of these things. And in doing them we will not only be helping others, we will be helping ourselves deal with and grow from these events as well. Give Resources. You have heard it and will hear it often. The resources required by these events will be unprecedented. Open your wallet and give. It doesn’t matter which charity you choose, just give.

    Pick a number, then add to it. Do a search on Katrina relief to find places to contribute. You can give more than money though. Perhaps you have other resources that you could offer. Spare blankets or other supplies will inevitably be leaving from your community in the coming days.

    Watch for these announcements and donate. If you know someone affected, or know someone who knows someone, perhaps you can provide a spare bedroom. You can even support relief efforts each time you search the internet.

    Give Yourself. If your situation allows, perhaps you feel drawn to go and help. If you are thinking about that and you can, go. Many of us won’t be able to go and lend a hand directly. You can still give of time and talents locally and have a direct impact on efforts there.

    Organizations like The Salvation Army and The Red Cross will be spread thin for months. If you volunteer in your town, more physical resources can remain on the Gulf Coast longer. Encourage Others to Give. This is a way for you to give of your talents. Use the leadership and influence skills that you have to encourage others to give.

    If you own a business, match employee contributions to relief efforts. If you are involved in any sort of organization, start a fund raising effort.

    A colleague of mine sent an email saying he would match any gifts given by those on his list up to a total of $500. Every person could do this. Ask yourself who you could influence and how you could personally help increase giving. Get creative! And get started.

    Say a Prayer. Regardless of your religious beliefs, or how you would state this, say a prayer. Say one for those who have lost family.

    For those who have lost their homes. For those who are sick or thirsty or hungry.

    And say a special prayer those involved in rescue and recovery efforts those giving of themselves to make things better for others. Keep Your Perspective. It is sometimes hard to keep a healthy perspective as you watch the events on television.

    It is easy to let the worry and concern become overwhelming. Do yourself a favor and don’t let these events overpower your life. Be grateful for your situation.

    Rethink how upset or frustrated you become at little inconveniences or challenges, because these situations mean little in the bigger scheme of things, and the events of recent days should make this very clear to us. Conserve. Our country is going to be dealing with the aftermath of Katrina for a long time. There are other little things that we can do that will make a difference.

    Conserve fuel. Carpool to work. Combine your errands, or just stay home.

    Turn off your air conditioning and turn off the lights. Fossil fuels will be in short supply and every little bit helps. Plus every dollar you don’t spend on fuel, is another dollar you could choose to donate to relief efforts. Give Again, Later. Many will give now, but agencies like The Red Cross will tell you that after the situation leaves most people’s conscious thoughts, the needs will still be great.

    Make a commitment now to make another contribution later in the year. One way to do this is to reduce your holiday spending and earmarking the difference for Katrina relief.

    I’m sure there are many more things that you can do to help both yourself and others in the coming weeks. It matters less what you do than that you do something. That is my urging to you. You can make a difference, but only if you take action.


    Paraiso De La Bonita Riviera Maya Mexico


    From the moment we arrived at the airport, to the wonderfully reassuring sight of a man, our man, standing with a board and our names were on it, it was impeccable service all the way. Our driver, in a lovely Lincoln Navigator, offered us not only water, but cold wet towels, and our choice of music for the short drive to Paraiso de la Bonita. Now we are talking about an expensive resort here so we would expect great service from the staff at the Paraiso de la Bonita, and we were not disappointed. It would be true to say the service was attentive, and understated, in fact exactly what to expect from this standard of resort. I have to say we were probably lucky because our visit was in May, and low season had arrived, so we were upgraded to a luxury suite with the works, not to put too fine a point on it. The suite had a king sized bed, and a plunge pool which was the icing on the cake. A great bathroom, with large tub and shower, good toiletries, nice sitting room. The staff were excellent, in that they were very friendly although the service could be a little slow at times, despite the fact I understand the ratio is two staff to one guest. Anything you need they are more than glad to supply. They remember your name, bring you gifts each night on your pillow. The beach is very sheltered by the reef, so there isn’t much in the way of waves, and that I believe was the cause of the amount of seaweed, although the beach was cleaned every morning. Sadly the weed kind of prevented you from swimming off the beach. To be fair we didn’t use the beach much, because there is a large deck to lie out on, and you can swim off that and there is no seaweed. The food at Paraiso was great. We were very impressed with the menus and enjoyed what they offered. The Guacamole and Risotto were especially good and fresh. The wine selection is good, and the variety of food throughout the day is great.. Free tea and coffee was served daily in the library which was a really cool place to chill out in, have a drink, read and use the internet for free. The pool was surrounded by luscious plants and had a large jaccuzzi tub in as well comfortable sunloungers as wide as a double bed. The cocktails and service were great from the pool bar, which had a great atmosphere especially around sunset where people congregated for pre dinner drinks. Overall the Paraiso de la Bonita is well worth staying at.
